A mixture of yeasts possessing the killer factor, ICV Thermo® Premium® is perfectly adapted to fermentation in thermovinification workshops.


Principal uses of the yeast


In red premium wines the yeasts develops: 

  • a varietal aromatic expression that is direct and fruity

  • volume in the mouth without final agressivity, even in juice from berries that are not ripe enough
  • a coating of the tannic structure and good stability of colour
  • a facilitated malolactic fermentation.
