Fermentation yeast ICV D80


A yeast selected to develop concentrated and powerful aromatic and taste characteristics in mediterranean red wines.

Saccharomyces cerevisiae was isolated in 1992 at Ampuis (Côte Rôtie) by the ICV.  It has the quality of the killer factor.


Principal uses for the yeast

In mediterranean high-range red wines, useful to develop concentrated and complex aromas,with notes of minerals and flowers (violet, liquorice).  Also used to develop power in the mouth with fine-grained tannins and a good final aromatic persistence 

It favours the full expression of tannic qualities in the long macerations.



Complementarity in blending

In red, high-range wines, ICV D80®  acts as a good complement to ICV D254® and ICV D21®.
