

Wine yeast ICV D80®

A yeast selected to help develop concentrated and spicy aromas, intense mid – palate sensations in Mediterranean red wines.
Saccharomyces cerevisiae in 1992 at Ampuis (Côte Rôtie) by ICV. It is classified as killer (K2 factor).
Main uses
In Mediterranean Ultra-Premium and Icon red wines, ICV D80 is used to develop concentrated and complex aromas, with notes of minerals and flowers (violet, liquorice). Also used to develop mid – palate sensations with fine-grained tannins and a long final aromatic persistence
It favors the full expression of tannic qualities with extended maceration.

Complementary for blending
In red, Ultra-Premium and Icon markets, ICV D80® fermented wines show a strong, interesting capacity to be blended with wines produced with ICV D254® or ICV D21®.
