Pourquoi préférer Booster®Rouge comme nutriment ? • Booster®Rouge est constitué à 100% de levures et est produit selon un procédé d’inactivation exclusif Lallemand permettant une disponibilité rapide dans le moût des fractions solubles des cellules. • Il apporte des acides gras poly-insaturés, des vitamines, et des stérols. • Il prévient la production d’odeurs soufrées pendant la fermentation puis l’élevage. • Il participe et modifie l'équilibre colloïdal du vin et ainsi : - améliore le volume en attaque de bouche et l’intensité tannique des vins rouges, - stabilise la couleur extraite dans les vinifications de raisins atteints par Botrytis cinerea. • Il libère des mannoprotéines qui interagissent avec les composés d’arômes (cf. graphique ci-contre). Les effets principaux sont : - l’amélioration de la fraîcheur aromatique, - l’atténuation des sensations de ‘‘sève/sciure’’ lors du travail avec du bois (barriques ou alternatifs).
